This salad recipe came from a person I met during one yoga retreat. I was interested because there was fresh beetroot in it! Originally it contained also parsley, but I added seeds and nuts instead:) A sweet, juicy and very colorful treat!:)
Ingredients
in roughly equal proportions:
carrots, beetroot, apples and red cabbage
handful of walnuts
sesame seeds
freshly squeezed lemon juice
and cinnamon obviously:)
Method
Grate carrots, apples, beetroot and cabbage with a grater or use a food processor for that. Mix everything well. Add chopped walnuts, sprinkle cinnamon and lemon juice.
