Green apples and kiwis baked under a cottage cheese crust with almonds and cinnamon. This cobbler contains almost no sugar, all sweetness comes from fruit and cinnamon:) Perfect for sweet-and-sour combination lovers.
Yield: 2 servings
Ingredients
Batter
150 g cottage cheese
1 egg
1 tablespoon sugar
1 tablespoon cream of wheat
dash of salt
cinnamon
Fruit layer
2 green apples
2 kiwis
handful of almonds
1 tablespoon semolina
Method
- Preheat the oven to 180°C. Combine cottage cheese, egg, sugar, semolina and salt until the ingredients well incorporated (the batter should be heavy).
- Peel the kiwis, slice them thinly. Removing the core slice the apples into pieces. Chop the almonds (raw or toasted).
- Sprinkle a tablespoon of semolina evenly onto the 22 cm baking form. Spread a few layers of fruits over it. (If fruits are juicy enough, during the baking they soak semolina and turn it into a barely visible pie layer). Sprinkle the almonds. Drop the batter by the spoonful on top of the fruits and nuts, covering as much of the top as possible with the batter. Sprinkle generously with cinnamon. Bake for about 20-25 minutes or until golden. Remove from the oven, let chill for a few minutes and serve with apricot jam.
