By now I’ve tried dozens of oatmeal cookies recipes. And they always win! Fiber-fat-protein-packed, it’s a portable meal ready to go:)
Ingredients
250 g rolled oats
30 g sesame seeds
20 g flax seeds
50 g sunflower seeds
60 g walnuts, chopped
100 g brown sugar
1 teaspoon ground cinnamon
salt
30 ml olive oil
80 ml milk
2 eggs
Method
- Preheat the oven to 180°C. Line a baking sheet with parchment paper.
- Combine oats, sesame seeds, flax seeds, sunflower seeds, walnuts and cinnamon. In a separate bowl mix olive oil, milk, eggs, brown sugar and salt, whisk until smooth. Stir into oat mixture until dough is evenly mixed. The dough will be sticky. Spoon it onto the prepared baking sheet and flatten the cookies. Sprinkle with cinnamon (here I used it twice, just love cinnamon!).
- Bake until edges of cookies are lightly browned, about 15 minutes. Allow to cool on a wire rack.
