Sütlaç – Turkish rice pudding

I love to cook with my family and friends. This super yummy rice pudding was prepared by my lovely friend Maria (with my little assistance:)). Usually I cook Kheer which is Indian rice pudding. But that’s another story:) Improvising we added to Sütlaç Indian saffron, egg yolks and pine nuts. The saffron by itself is a wonderful spice. It dyes beautifully and adds an exceptional flavor:)

       Ingredients

1/2 cup rice
2 cups water
4 1/4 cups milk
3/4 cup sugar
2 egg yolks
2 tablespoons cornstarch
a few strands of saffron
handful of pine nuts
ground cinnamon
pinch of salt

       Method

  • Wash the rice under running water until water runs clear. Pour 2 cups of water in a heavy bottom pan and let it come to a boil. Add the rice and cook on low heat until the rice has absorbed the water about 20-25 minutes. Stir in 4 cups of milk, sugar and salt, bring it to a boil. Dissolve cornstarch in remaining 1/4 cup of milk and pour it into the boiling rice continuously stirring. Simmer it for another 15 minutes on medium heat and keep on stirring. Let it cool. Then stir in egg yolks and ground saffron.
  • Preheat the oven to 180°C.
  • Transfer the pudding into the pudding cups and place them onto the baking sheet. Add about 2-3 cm of very hot water to the baking sheet so it surrounds the pudding cups. Bake until the top is lightly browned. Remove, sprinkle with cinnamon and pine nuts. Let it chill and serve.
