Nordic nut bread (stone age bread)

This bread is a sheer delight! The very best fuel for cool weather cycling! Or when you move a lot outdoors and need to recharge yourself. It doesn’t contain flour or leavening agent. But it’s very fat! I bet you wouldn’t be able to eat more than a slice at once:) Winter time is calling for this type of energy booster! Enjoy!:)

       Ingredients

100 g (3 ½ oz) walnuts
100 g almonds
100 g flax seeds
100 g sesame seeds
100 g poppy seeds
100 g sunflower seeds
100 g pumpkin seeds
1 teaspoon salt
1/4 cup olive oil
5 eggs

       Method

  • Preheat the oven to 175°C. Line a loaf baking pan with parchment paper.
  • Mince walnuts and almonds. Mix seeds, nuts and salt in a big bowl. Add olive oil and eggs. Mix everything well. Place the mixture into the baking pan. Bake about 1 hour. Remove bread from the oven and let it chill before slicing.
  • P.S. This nut-seed-bread tend to be dry. So if you would like to get more moist bread just add 100 ml of water to the recipe.
