Blueberry pies are impossibly beautiful. Mustikkapiirakka is a pie with a tender crust, caramel flavor and rich blueberry-ishness. The yummiest one:) You can easily use fresh or frozen berries for this recipe, or substitute bilberries, blackberries, raspberries, or any other fruit. I used bilberries here. Bilberries are juicier than blueberries, darker in color ranging from blue to purple-black.
150 g soft butter
80 g granulated sugar
200 g all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon cinnamon
400 g bilberries
250 ml sour cream (or full fat greek yogurt)
50 g Demerara sugar (it will add a natural caramel-like flavor)
1 teaspoon vanilla extract
- Preheat the oven to 200 C.
- Combine flour, cinnamon and baking powder. In a separate bowl using the electric mixer beat soft butter and sugar until fluffy. Add the egg and beat again. Gradually add the flour mixture and stir until smooth batter is formed. Evenly spread the batter into the 22 cm baking dish, covering the sides. Pour bilberries onto the pie base and spread out.
- In a medium bowl using the electric mixer beat sour cream, egg, brown sugar and vanilla (or you can whisk it by hand). Pour the mixture over the berries.
- Bake for 25-30 minutes on the lower oven rack. Leave the pie in the open cooling oven until the surface firms up.
