Lemon oatmeal cookies

These lemon cookies are slightly bitter but it goes well in contrast with sweet raisins and candied orange peel. For not so rich lemon taste use only lemon juice and zest from it.


1 lemon
150 g rolled oats
100 g brown sugar
60 g vegetable oil
1 egg
70 g oatmeal flour
40 g candied orange peel
40 g black raisins
40 g hazelnuts
40 g walnuts
1 teaspoon ground cinnamon
1/3 teaspoon salt


Process 1 whole lemon using a blender or food processor until it gets completely pureed. Add oil, egg, brown sugar, oats, oat flour, salt, cinnamon and mix well. Stir in minced nuts, candied orange peel and raisins. Spoon the dough onto the baking sheet and form the cookies flattening the dough. Bake for 10-15 minutes at 200°C. Allow to cool.
