Carrot orange honey loaf


3 medium carrots, grated
zest and juice from 1 orange
100 ml vegetable oil
200 ml vegetable/dairy milk
3 eggs
4 tablespoons honey
250 g all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon soda
1 tablespoon fresh lemon juice
pinch salt


  • Preheat the oven to 180°C. Line a loaf baking pan with parchment paper or grease with oil.
  • Combine oil, eggs, milk and honey. Stir in grated carrot, orange zest and juice. In a separate bowl mix the flour, cinnamon, salt and soda reacted with lemon juice. Combine dry and liquid ingredients together until well incorporated. Pour the batter into the pan and bake for about 25-30 minutes until golden and the toothpick goes out clean. Let it cool.
  • P.S. You can make icing: mix a few tablespoons of freshly squeezed lemon juice with icing sugar until creamy. Spread it over the loaf.
