“I believe love and respect the ingredients whatever they may be xx” said wonderful Julie whilst sharing this recipe with me. “I make some date, walnut and banana muffins which are made with oil and no animal fat, they are brilliant both to eat or freeze. And you can put icing on top with vanilla or cinnamon or just naked they are gorgeous”.
As always I modified the recipe, now just can’t recall what I had changed in particular. So the outcome may look slightly different than on my photos.
It makes 18 muffins, but it works also for one solid cake. The top is covered with melted chocolate.
Ingredients
6 oz (170 g) chopped walnuts
6 small very ripe bananas
12 oz (340 g) chopped dates
1.5 cup oil
6 eggs
2.25 cups soft brown sugar
3 tsp baking powder
3 tsp vanilla extract or 1 vanilla pod
4.5 cups self-raising flour
Method
Mix the wet then add the dry ingredients until just combined. Bake 150 C for 20 minutes or until done. Test with skewer or thin knife if not sure, it should come out clean. You can then ice with flavour of your choice as in icing sugar etc. Or you can make butter icing like in cup cakes, pipe on and it’s truly yummy:)
