The vegan flapjacks is a plentiful source of energy. Excellent for cyclists, like homemade granola bars.
Ingredients
300 g porridge oats (big leaf, not fortified)
80 g black raisins
70 g golden raisins
70 g brown sugar
1 tablespoon maple/corn syrup
100 g vegetable oil
30 g water
1 teaspoon cinnamon
Method
- Preheat the oven 180°C/350°F. Either grease or line 20×20 cm baking pan with parchment paper.
- Simmer the water, sugar and syrup together over the very low heat. Stir until sugar dissolves. Let cool for a while. Mix in the oil. In a bowl, combine the oats, raisins and cinnamon. Add the sugar mixture and stir everything together well. Transfer into the baking pan and press it down. Bake for 20-25 minutes until fragrant. Cut the flapjacks into squares. Allow to cool. Store in a cookie container.
