These cookies are just like your morning oatmeal, only baked and sweetened. Carrot is ‘disguised’ because of super rich orange flavor. Chickpea powder added as extra protein.
Yield: 12 cookies
Ingredients
2 medium carrots, finely grated
200 g regular oats
zest from 1 orange, finely grated
2 eggs
100 g sugar
100 g walnuts
1 teaspoon ground cardamom
1/3 teaspoon salt
3 teaspoons chickpea powder, optionally
Method
- Preheat the oven to 200°C. Line oven tray with parchment paper.
- In a medium bowl combine grated carrot, orange zest, eggs, cardamom, sugar and salt. Add oats and minced walnuts. Mix everything well.
- Form balls out of the dough and make the cookies, by slightly pressing them. Bake for 10-15 minutes until fragrant. Allow to cool for a few minutes. Transfer the cookies to a wire rack and let cool completely.
