Oatmeal carrot cardamom cookies (flourless)

These cookies are just like your morning oatmeal, only baked and sweetened. Carrot is ‘disguised’ because of super rich orange flavor. Chickpea powder added as extra protein.
Yield: 12 cookies


2 medium carrots, finely grated
200 g regular oats
zest from 1 orange, finely grated
2 eggs
100 g sugar
100 g walnuts
1 teaspoon ground cardamom
1/3 teaspoon salt
3 teaspoons chickpea powder, optionally


  • Preheat the oven to 200°C. Line oven tray with parchment paper.
  • In a medium bowl combine grated carrot, orange zest, eggs, cardamom, sugar and salt. Add oats and minced walnuts. Mix everything well.
  • Form balls out of the dough and make the cookies, by slightly pressing them. Bake for 10-15 minutes until fragrant. Allow to cool for a few minutes. Transfer the cookies to a wire rack and let cool completely.
