Baked fruit oatmeal (sugarless)

When you want something yummy and fruity made with oatmeal, this recipe would work as quick and easy. Besides the texture is somehow more cakey than oaty. No sugar added, as berries and fruit are already sweet, plus cloves and cinnamon add extra sweetness and flavor! Once I’ve seen an oatmeal recipe with egg whites as additional protein source, so here this idea was realized:)
Yield: 3 servings

      Ingredients

150 g regular oats
2 egg whites
200 ml milk
1/3 teaspoon freshly ground cloves
dash of cinnamon
2 apricots, sliced
1/2 cup pitted cherries
1 banana, sliced

      Method

  • Preheat the oven to 180°C. Grease ramekins or other small baking dishes with oil.
  • Whisk the egg whites until bubbly. Add milk and ground cloves and stir well. Place 2/3 fruit and berries in your baking dishes. Sprinkle the oats evenly over the fruit. Arrange the rest of the berries and fruit. Pour the milk mixture over to cover the oats. Dust with cinnamon. Bake for 15-20 minutes or until topping is beginning to lightly brown. Serve!
