Yield: 2 servings
trees from 1 bunch of broccoli
a slab of feta cheese
2 sprinkles of pine nuts
olive oil, salt & pepper, as needed
Blanch or steam broccoli florets. Cook potatoes until tender. Chop tomatoes and cube feta. Assemble bowls with the vegetables and basil leaves. Drizzle with olive oil, sprinkle with nuts and cheese. Season with salt and pepper, if desirable. Serve!
