Granola bars (vegan)

Semisweet granola bars which I often make as a recharging fuel for cycling. Since granola is crumbly, this method helps to turn it into a handy meal:) Add more sugar or syrup for sweetness. And use any nuts, seeds, dried fruit and tasty bits you like. Enjoy!:)


3 cups/300 g rolled oats
1/3 cup neutral oil/melted coconut oil
1/4 cup golden syrup
1 teaspoon ground cloves
1 teaspoon salt
1/2 cup brown sugar
1 cup water
1/8 cup corn starch
1/2 cup pumpkin seeds
1/2 cup black/golden raisins
2 tablespoons sesame seeds
1/2 cup chopped almonds


Preheat the oven to 150C. Line a baking tray with parchment paper.

In a big bowl, combine the oats, cloves, salt, oil ans golden syrup. Mix until well combined. Stir in pumpkin and sesame seeds, almonds and raisins. Spread the granola mixture in an even layer on a baking tray. Bake about 15-20 minutes, stirring every 5 minutes until granola is toasted.

Meanwhile, combine the water, starch and sugar in a saucepan and place it over medium heat. Simmer, continuously stirring, until the sugar dissolves and the mixture thickens.

Pour the liquid into the bowl with granola. Mix well. Transfer granola into the baking tray and press it down (it can be any other moveable flat surface). Cut into squares. Refrigerate for at least 2 hours. The bars will be soggy a bit, so remove them from the fridge and leave uncovered to dry.
