Beet pear tomato salad with walnuts (vegan)

A delicious and easy-to-make salad that can be served independently or as a side dish. Toasted crunchy walnuts and juicy sweet pear make it succulent and rich. Add some balsamic vinegar, if desirable. And include more of your favorite vegetables too:) Enjoy!:)
Yield: 2 servings

Ingredients

2 small cooked/baked beets
4 tomatoes
1 pear
a small bunch of spinach
a small bunch of basil
a handful of toasted walnuts
a pinch of sesame seeds
a squeeze of lemon juice
a drizzle of olive oil
a sprinkle of sea salt

Method

Wash and drain the spinach and basil. Chop and arrange on serving plates or in a salad bowl. Slice the tomatoes and a pear, cube the beets. Add the tomatoes to the greens seasoning with some sea salt. Add the beets and pear. Squeeze some lemon juice over. Drizzle with some olive oil. Scatter the walnuts and sesame. Serve!:)

    This salad looks so colorful, it just means that it must be incredibly delicious, never paired beets with similar ingredients, but looks refreshing!

      The next salad has outperformed this one in colorfulness:D Beets, juicy pears, tomatoes + nuts are delish. It’s my alternative to beet carpaccio!:)
