Fancy vegetarian breakfast

This recipe is heartful and fun:) The shapes of bread add a little more texture to the usual sunny-side-up eggs. A tasty surprise for your loved ones:)
Makes 2 servings


2 eggs
2 slices bread
6 florets cooked broccoli
4 tomatoes
1 bell pepper
1 cucumber
a few pieces of brie cheese
2 slices semi-hard cheese
2 slices cooked/baked beetroot
a sprinkle of paprika
salt to taste

Cut all the veggies and assemble on serving plates along with broccoli florets and brie.

With a cookie cutter or a rim of a glass cut the holes in the center of the slices of bread. Toast the removed bread in the toaster. Top each toast with a slice of semi-hard cheese and beetroot (I used smaller cookie cutters to cut the cheese and beet).

Grease a medium skillet with oil/butter and heat over medium heat. Place the frames of bread and lightly toast them. Flip and crack 1 egg carefully inside each one. Cook over medium-low heat until the eggs are set, about 3 minutes. Sprinkle with salt and paprika.

Serve straight away along with the veggies, toasts and yogurt sauce.
