An easy recipe of oat cookies, which in case of using quick or instant oats even don’t require baking. So you can combine all the ingredients adding any tasty bits you like, and simply leave formed balls or patties to chill in the fridge. The shelf life will be diminished though, from a couple of weeks for baked cookies, to a couple of days for raw. They will remain tasty and healthy regardless of the chosen preparation method:)
Makes 16 cookies
Takes 50 minutes (20 preparation, 20 baking, 10 cooling)
Ingrmedients
2 cups dates
300 g oats, big leaf
80 g sesame seeds
2 sweet apples, grated
2 tbsp neutral vegetable oil
1 heaped teaspoon nutmeg
50 g dark vegan chocolate, optionally
Directions
Preheat the oven to 180C/350F. Line the cookie sheet with parchment paper.
Soak the dates in hot water. Drain, deseed and mash them using a fork until even sticky mass has formed. Rinse and grate the apples.
In a medium bowl, combine the oats, sesame seeds and nutmeg. Add in the oil and mix well. Mix in the grated apples and pureed dates. Knead well by hand until the dates are evenly distributed. Form the balls out of the dough and pressing them form the patties. Place onto the baking sheet and arrange a piece of chocolate inside each cookie (optionally). Bake for 20 minutes until fragrant and browned around the edges. Allow to cool in the open oven for 5 minutes. Then transfer on a wire rack to cool longer.

Sesame date cookies are my friend’s favourite, she makes them for lunch after class, and I really like them too!
