Baked ricotta Patties with bananas (sugar-free)

Hot ricotta patties with bananas, blueberry jam and yogurt – what can be more pleasing and nourishing in the morning? The key ingredient of these cheesy “crumpets” is full-fat fresh ricotta, or cottage cheese. High in protein and absolutely delicious treat!!

Takes 30 mins (prep – 10 mins, baking – 20 mins)

Ingredients

600 g ricotta/cottage cheese, drained
2 eggs
6 tbsp fine semolina (or rice flour) + 2 tbsp extra for coating
zest from 1/2 lemon
2 ripe bananas
a few sprinkles of cinnamon

Directions

Preheat the oven to 200°C/400°F. Line the baking tray with parchment paper.

In a medium bowl, fluff the ricotta cheese with a fork. Add the eggs, 6 tbsp of semolina (or rice flour), lemon zest and mix everything well (add a little flour if the batter seems to be watery). Slice the bananas diagonally into wedges of desired thickness.

Scooping out a tablespoon of batter at a time, cover it with fine semolina. Roll into balls and form individual patties inserting a slice of banana into each. Arrange onto the baking tray. Generously sprinkle with cinnamon. Bake for about 20 minutes until fragrant and golden. The patties will puff, but once removed from the oven – will flatten. Serve immediately with yogurt, jam or crème fraîche. Enjoy!:)
