From series “travel cakes”!:) (distance traveled – 600km:D)
Following the proven before formula of excellent vegan chocolate cake, I’ve prepared this irresistible variation of it. The magic is about tiny pieces of zucchini that melt into the cake giving it that moist texture:)
It’s also surprising at the end! When all of a sudden you can feel some sort of fire in your mouth…Expect wonder and questions from people not familiar with choco’n’pepper taste in baked goods:)
Be sure to grate zucchini using shredding surface with small holes. And no one would ever guess that it’s a literally plant-based treat:)

Serves 8-12
Takes 1 hr 10 mins + cooling (prep – 20 mins, baking – 50 mins)
Ingredients
The cake
1 heaped cup finely grated zucchini, drained (1 medium zucchini)
2 1/4 cups plain flour
1/2 cup dark cocoa powder
1/2 cup dark brown sugar
1/2 cup refined sugar
1 tsp baking soda
1/2 tsp salt
1/4 tsp cayenne pepper
1/4 tsp chili pepper
1 cup chicory (or brewed coffee)
9 tbps neutral vegetable oil (grapeseed/sunflower/corn)
1 tbsp balsamic vinegar
The topping
100 g dark chocolate
Directions
Preheat the oven to 180°C/350°F. Either grease or flour (or both) a Ø22 cm/9-inch bundt pan (any similar-sized baking pan).
Finely grate the zucchini. Place in a sieve over a bowl and press with back of a spoon to remove moisture.
In a large bowl, sift together the flour and cocoa powder. Whisk in sugars, baking soda, salt and peppers. Pour in cooled coffee (or chicory), vegetable oil and vinegar, whisking thoroughly, but quickly, until the batter comes together and is quite smooth.
Pour into the prepared bundt pan. Bake for 45-50 minutes until fragrant and a toothpick comes out clean. The cake should spring back when gently pressed. Allow to cool in pan for 10 minutes, then turn out onto a wire rack to cool completely. Once the cake is cooled, drizzle with melted over a hot-water bath or in a microwave chocolate. Slice, serve and enjoy!:)

More beautiful moments of that day in June:) It was a retreat of silence/mindful body with my favourite yoga teacher in his retreat center. The day ended up with a great storm and we were sitting on the summer terrace watching the rain and lightnings playing in the sky, sipping masala tea and eating this cake:D
