A spiced cake again! The extremely fragrant bake for cosy evenings at home:) Moist, crumbly and very easy to make. Replace plums with any seasonal fruit of your choice: apples, persimmon, pears, cranberries etc, or native to your location..:) Happy baking!:)
Takes 1 hr 10 mins (prep – 25 mins, baking – 45 mins) + cooling
Serves 8-10
Ingredients
3 eggs
1/3 cup neutral veg oil (sunflower/corn)
1/3 cup cooled coffee
1/2 cup sugar (brown)
1 1/2 cup wholegrain flour
pinch of salt
zest of 1 small lemon
1 cm fresh grated ginger
1 tsp cinnamon powder
1/3 tsp cardamom powder
1 tsp ginger powder
1/3 tsp clove powder
1/2 tsp baking soda
squeeze of lemon
8 plums, rinsed and halved
1 cup walnuts, chopped
Method
Preheat the oven to 180°C/350°F. Either grease with oil/butter and lightly flour, or line with parchment a medium-sized baking pan (I used a 18 cm square dish).
In a mixing bowl, using an electric mixer or whisk, beat up the eggs and sugar until light and fluffy. Add oil, cooled coffee and continue beating until combined. Stir in the lemon zest and freshly grated ginger.
In another bowl, sift in the flour, spices and salt. Lightly whisk. Combine the wet and dry ingredients adding baking soda with lemon juice. Stir in the chopped walnuts and mix until evenly incorporated.
Pour about 1/3 of the batter into the pan. Arrange the halved plums over. Sprinkle with cinnamon. Top with the remaining batter and some walnuts. Bake for 40-45 minutes until fragrant and the toothpick inserted into the center comes out clean (to prevent overbrowning, tent with foil after 30 minutes of baking in case the top has already browned much). Leave in the oven for 5-10 minutes. Then remove and let cool in the pan (or transfer to a wire rack if you lined the pan with parchment and the cake is removable). Slice, serve and enjoy!:)
