The cookie season is in full swing now and emerging in my kitchen oat cookies hit record numbers:) This recipe is about soft inside and crunchy outside, truly oaty and sweet cookies. Containing oats, spices, nuts, fruit, spelt and oat flours. Designed for kids! And approved by them:) Happy baking!:)
Takes 40 mins (prep – 15-20 mins, baking–20 mins (2 batches) + cooling
Makes 23 cookies
Ingredients
3 eggs
1/4 cup neutral veg oil (sunflower/corn)
1/3 cup lukewarm tea (or orange juice)
1/3 cup sugar
2 cups regular oats
1/2 cup oat flour
1 cup spelt flour (or regular/wholegrain)
pinch of salt
zest of 1 small lemon
1 tsp nutmeg powder
1/3 tsp clove powder
1/2 tsp baking soda
squeeze of lemon
1/2 cup walnuts, chopped
1/2 cup dates
1/3 cup raisins (or dried cranberries)
Method
Preheat the oven to 180°C/350°F. Line the baking sheets with parchment.
In a large mixing bowl, combine the eggs, oil, tea, sugar and lightly whisk. Add the lemon zest and oats. Stir to combine.
Rinse, deseed and chop the dates. Finely chop the walnuts.
In another bowl, combine the flours, nutmeg, clove and salt. Add the dry ingredients and soda mixed with lemon juice to the wet ingredients. Stir in the dried fruit and walnuts. The formed dough should be sticky (it means that it retains the needed hydration).
Dampen your hands with water, spoon the dough and form with hands patties. Place onto the baking sheets. Bake for 10 minutes until fragrant and browned around the edges. Remove and let cool on a wire rack. Enjoy!:)
