Crêpes with Apple Filling

Easy homemade crêpes with a delicious apple filling. The recipe is good for both sweet and savory applications. After completing cooking and filling a batch of these I’ve got a few spare ones. And filled them with wilted spinach + tofu with seaweed. It was delish!

Everybody loves “thin pancakes” and I make them mostly at “crêpe parties” = friends gatherings. So for me crêpes equal holiday! Happy cooking!:)
Takes 40 mins (prep crepes – 25 mins, prep filling – 15 mins)
Makes about a dozen

Ingredients

Batter
1 1/2 cup milk
2 medium eggs
1 tbsp olive oil (or any neutral oil)
1 cup plain flour
1 1/2 tbsp ground flax (golden or brown)
pinch of salt
Filling
4 large sweet apples
squeeze of lemon
1/2 cup water
1/2 tsp clove powder
1/4 cup sugar
1 tbsp corn starch
handful of chopped walnuts, for topping

Method

In a bowl, whisk together the eggs, milk and olive oil. Gradually add in flour, powdered flax and salt, whisk until smooth. Alternatively, put all batter ingredients in a blender and pulse until well combined.

Brush a medium sized non-stick frying pan or skillet with 1 tablespoon of vegetable oil and heat over medium-high heat. Ladle about 1/3 cup of batter (depending on the size of the pan) into the center of the frying pan, quickly swirling the pan from side to side to completely coat the surface with batter. Heat crepe through until edges get slightly crispy. Flip and cook the other side. Remove and repeat the process with all the remaining batter, stacking crepes onto a plate.
Use some oil to coat the frying pan if needed (usually I grease it only once in the very beginning, as oil is added to the batter to prevent sticking).

To make the filling, core and slice the rinsed apples. Add 1 tsp of lemon zest if desirable. Place the apples into a medium saucepan, add water, sugar and clove. Bring to a boil and simmer for about 5 minutes. Combine the lemon juice and corn starch adding some water to obtain 2 tbsp of liquid. Or just pour as much water as it takes to dissolve the starch. Pour it into the saucepan and simmer constantly stirring until the mixture has thickened (about 3 minutes). It should be runny like a sauce. Remove from heat and let cool for a few minutes. Fill your crepes with the apple filling rolling them into logs, sprinkle with nuts and enjoy!:)
