Serves 4-6
Takes 45 mins (prep 20 mins, baking 25 mins) + cooling min. 30 mins
Ingredients
3 large eggs
1/3 cup (55 g) brown sugar
1/3 cup (80 g) full-fat plain greek yogurt (or similar)
1/2 cup (40 g) dark cocoa powder
1/3 tsp cardamom
1/3 tsp cayenne pepper
1/4 tsp salt
Method
Preheat the oven to 180°C/350°F. Either grease with butter/oil or line with parchment a small baking pan (I used heartshaped 17 cm wide, 6 cm deep silicone form).
Beat the eggs and sugar until fluffy and glossy (the mixture should be light and carefully mixed with the other ingredients as we don’t add any leavening agent. The cake will rise naturally due to bubbles of air in beaten eggs). Gently fold the yogurt into the egg mixture. Sift in cocoa powder, cardamom, cayenne pepper and salt. Stir carefully with spatula moving from sides to the center of the mixing bowl until evenly distributed.
Pour the batter into the baking pan. Bake for 25 minutes until fragrant and
the toothpick inserted into the center of the cake comes out clean. Leave in the open oven for about 10 minutes. Then temove the cake from the baking pan and let cool on a wire rack. Slice and serve with chocolate topping!
