A variation of favorite banana bread! Moist, fragrant, moderately sweet:) Grab-and-go treat! Enjoy!:)
Ingredients
4 apples
2 bananas
4 eggs
80 ml vegetable oil
80 g sugar
250 g flour
1 teaspoon cinnamon
1/4 teaspoon soda
2 tablespoons lemon juice
lemon zest from 1 lemon
handful of minced walnuts
oats/nuts/seeds for topping
Method
- Preheat the oven to 180 C. Peel the apples and slice them removing the core. Line a loaf baking pan with parchment paper or grease it with oil/butter. Arrange the apple slices in a few layers into the baking pan. Sprinkle with 1 tbsp of lemon juice (it will prevent apples from browning), cinnamon and some minced walnuts.
- Whisk eggs, oil and sugar. Add banana puree and lemon zest, mix well. In a separate bowl combine flour, cinnamon, soda and remaining lemon juice. Or add them, without premixing, straight to the banana mixture. Fold in minced walnuts. Pour the batter over the apples and sprinkle with oats/nuts/seeds. Bake about 30 minutes until golden and the toothpick goes out clean. Let cool for a few minutes and transfer to the wire rack to cool completely. Slice and serve!
