A festive German cookie recipe for spicy cookie lovers! It’s very simple and contains no butter or shortening. The next day these cookies taste only better! Experiment with spices, nuts and dried fruit, create your own favourite variation:) Happy baking!

Makes 18 cookies
Ingredients
3 large eggs
1 cup (145 g) dark brown sugar
1 1/2 cup (240 g) wholegrain flour
1 1/2 tsp clove powder
1 1/2 tsp cinnamon powder
1/4 tsp chili pepper
1/2 tsp salt
1/3 tsp baking soda
squeeze of lemon
1 cup (105 g) walnuts
1/2 cup (90 g) raisins
Method
Preheat the oven to 200°C/400°F. Line the cookie sheet with parchment.
Using an electric mixer or hand whisk, beat the eggs and sugar until fluffy.
In a medium mixing bowl, sift in the flour, clove, cinnamon, chili and salt.
Chop the walnuts. Soak the raisins in hot water for a few minutes, drain.
Combine the wet and dry ingredients mixing in soda and lemon juice. Stir in the chopped walnuts and raisins.
Scoop the dough and drop onto the cookie sheet about 2 inches/5 cm apart forming round cookies. Bake for 8-10 mins until fragrant and golden brown around the edges. Let cool for 5-10 minutes, then transfer to a wire rack to let cool completely. Sprinkle with powdered sugar, if desirable. Enjoy!:)
